"Jacob" is an appropriate Amish first name
“Bruder” might work, [Pennsylvania Dutch for “brother,” common Amish/Mennonite greeting at church]. Boring, though.
“Thy closer?”
“No More Mennonite Guy” maybe as a theme song [A group called the Electric Amish did this as a send-up of Alice Cooper’s “No More Mr. Nice Guy”]

I appreciate the effort, but we need something which screams Amish!
(of course, “screams Amish” is something of an oxymoron)
Unfortunately, I don’t know if there are any words that really feel inherently Amish.

That sounds very Amish to me. And then once the nickname has settled into common parlance, we can just call him Zeke for short.
