OT - Favorite gameday recipes

Three questions for you fine folks:

1) Do you cook?

2) What are some of your favorite "sports" foods? In other words, what are you making for your team's bowl game?

3) What the heck are avacados used in, aside from guacamole? I was making some guac earlier, and realized I've never eaten an avacado in any other form. Any help here?

Anywho, here's my super-easy, but super-delicious 7-layer dip. I make this about once a year, and eat it for almost every meal until it's gone...it's that good.

Use a big glass pan.

Layer #1: Refried beans - 1 can should cover the bottom of the pan nicely. Either get the kind with green chilis mixed in, or mix in some green chilis on your own.
Layer #2: Salsa - I use Pace Picante - Medium if I'm at my folks' house, or Hot if I'm making the stuff for my brothers/friends/self. Get a big jar and just glop on enough to cover your refried beans.
Layer #3: Guacamole: One tub, or just make it yourself. Mushing up the avacados is kind of fun, and a good way to relieve the stresses of being a Royals fan.
Layer #4: Sour Cream: Again, just get the really big tub and spread whatever amount you want. Whatever's left could serve as dip for some taquitos or seasoned tator tots or something.
Layer #5: Green onion: My mom skips this layer, but I think these are important enough to be their own layer. Green onions are fantastic!
Layer #6: Other veggies: I dice a big tomato and sprinkle it on, and sometimes toss in a can of sliced olives.
Layter #7: CHEESE! Grate a ton of cheese and smother the pan in it. Cheese is good. Really, really good.

Bam! That's it. Throw the pan in the fridge for a while to let all the liquidy stuff set up a bit. Bust it out at kickoff and enjoy with your tortilla chip of choice. Or Wheat Thins, or anything. Or nothing. (Perhaps cover it in foil or somehing so the rest of your fridge doesn't smell/taste like green onions?)

So easy, but so good.

What are your favorite gameday recipes? Also....please don't think lower of me becase I'm on my computer at 2:30 on New Years. I'm in my hometown and I didn't want to party with the high school classmates I hated at the time and haven't started liking since then.

Happy New Years!

Great OT topic

I love to cook, but my tastes are pretty pedestrian. I make a mean chili (the key is Williams Chili Seasoning, made in Lenexa, KS). Whenever I go back to Kansas to visit my family, I always pick up some Williams Chili Seasoning. And every Super Bowl, I make the easiest, most delicious cheese dip. Two ingredients: Velveeta and Ro-tel (which is canned tomatoes and chiles). You can make it with Velveeta and a jar of salsa, but it is best with Ro-tel. A big bowl of that cheese dip, a big bag of tortilla chips and some good beer is the best way to watch a Super Bowl.

You're missing a key ingredient.

Add about a 1/2 pound of taco meat or sausage to the cheese dip.

I like food
1) Do you cook?

Nope. I am HORRIBLE. If I cook… nobody eats.

2) What are some of your favorite “sports” foods? In other words, what are you making for your team’s bowl game?

I like superbowl sunday because its always a madd dash to the super market and me and my buddies go down every aisle just putting things that tickle our fancy in a cart. It is later sorted out in the respective house.

3) What the heck are avacados used in, aside from guacamole? I was making some guac earlier, and realized I’ve never eaten an avacado in any other form. Any help here?

I know this isn’t true for everyone but in my family avacados are randomly included in our meals. Slices of avacados just turn up atleast once a month and we just… eat them with our rice and beans. Guess its a hispanic thing.

Interesting

1) Not the best but I try.

2) I’m always up for the chicken manicotti. And not the ‘kind’ that you get in restaurants. I’m talking big chunks of chicken, lots of cheese queso inside and out, salsa…. loaded! Usually we stuff the manicottis so full that the shells split down the sides. They are almost like enchaladas I guess… more mexican than italian…

3) Avacados in the US aren’t very good. In other countries they are allowed to ripen fully on the vine and they are spectacular.

Don't forget to send your broken maples to the US Forest Service.

great topic idea

1) Same as 306008—I’m not the best cook, but I try, and I generally enjoy cooking.

2) I often make quesedillas or burritos or some other Mexican food for “sports” food. Ingredients are cheap and delicious, you can easily make it in large quantities, and I absolutely love spicy food. I usually fill my quesedillas with cheese (often a mix of cheddar and jack), onions, jalapeno peppers, and salsa (I tend to prefer green salsa to red, but I like red too), with a sprinkling of hot sauce (did I mention that I love spicy food?). Sometimes I toss in some green or red peppers if I’m in the mood for them. And for quesedillas, I sometimes fry them in a pan with a little olive oil. Not the healthiest thing in the world, but the tortilla soaks up the olive oil, and you get a very crispy and delicious quesedilla as a result, one that goes down very, very easily with a Dos Equis.

3) Avocados are used in some sushi rolls. I love sushi almost as much as I love Mexican food, so I get a lot of avocados in both cuisines. :)

I do the same thing!

On the quesedillas that is. Fry them! :) Great stuff

That's why we play the season on paper.

avocados

they can go into a tossed salad
a good salad is to have spinach, mandarin oranges, and avocados – use a poppy seed dressing – good and good for you
they are good just plain with a little salt

Grill!

And all meat must be grilled on charcoal.

I'm a bit of a heritic on this issue

hot dogs are about the only meat I eat that I don’t like grilled. Something about that charred skin on a hot dog is unappealing to me.

I like both...

but do think boiled has a higher upside

you have to be working with quality dogs though, if you buy a 12 pack of generic little ones, i’d probably want them grilled

by royalsreview on Jan 1, 2009 3:52 PM EST to parent up reply reply actions actions   0 recs

Boiling them is less work,

so the head chef can actually watch the game or whatever instead of being at the grill all day.

Also, I can’t be part of a discussion about hot dogs without at least this many “that’s what she said”s.

WTF, self?

I love all my meat/chicken/fish grilled

except my hot dogs. Boiled just like at the ole ballpark.

Ever had those hot dogs from the rolloing burners like the ones they sell at 7-11?

Dog aweful!

tonight I have made Hoppin' John

a traditional southern meal on New Years Day
black eyed peas with ham and rice (for good luck)
we don’t do the greens, substituting a nice green salad instead
plus cornbread and plenty of beer

Todays menu was good

i made cheese dip Velveeta, Taco Meat
Boilermaker chili
pigs in a blanket
little smokeys
meat and cheese tray

It was a good day of food although I am tired of USC beating up on the weak Big Ten

It takes 46 muscles to frown but only 4 to flip 'em the bird.

good topic

1. i enjoy cooking

2. my super bowl specialty is to take little smokies and wrap them in bacon. Then sprinkle brown sugar on the top and put in the oven till the bacon is done. They are a little messy and only really good when they are hot. Eat them soon cause once the bacon grease cools down they become really unappealing.

3. I like to put sliced avocados on sandwiches with turkey and Monterey jack cheese

Aw food, one of my foavorite topics

1. I cook and actually enjoy it sometimes. The Mrs and me have a deal, one cooks and the other does the dishes. I hate doing dishes, so I end up cooking a lot.

2. Pulled pork sandwiches and Brookville coleslaw.

I have also done jambalaya

Also, we usually have Sonoran Hot Dogs. They are a great. Basically, your normal hot dog wrapped in bacon with a ton of toppings.

3. Mainly sandwiches (BLTs) and salads. Also, down here in Tucson, it gets made into several different kinds of sauces besides the thick guac.

Avocados are yummy - just cut open and eat

Easy Recipe:

Melt and heat on stove
1. one block of cream cheese (low or no fat if you prefer)
2. one can of chile (your choice of brand and style)
3. add Pace Hot to your preferred “heat level”

Done, eat with your favorite chips

I AM intangible!

I am the cook for my family

On most every NFL Sunday, we rotate between several hearty dishes that can be eaten all day long from a crock pot or stock pot:

Ham & Bean Soup
Chilli
Jambalaya
Gumbo
Homemade Chicken Soup with egg noodles (this is loyal2theroyals’ specialty – it’s delicious)

On occasion, I like to prepare some smoked dishes as well – ribs, pulled pork, brisket, or whole chicken.

Re-reading this, I’m AMAZED that I’ve been able to keep off the 35 lbs I lost from May thru September.

WOW losing 35 lbs

in 5-6 months.

NICELY DONE!

But is that healthy?

Jambalaya & Gumbo sounds great!

Best luck to you.

I like to cook...and on any major sports day ...

I like to something that can be shoved in the oven and not fussed with. I did a ham for Jan 1. Then added lots of the usual munchies with it and great rolls and cheese to make sandwiches. I had leftover pie and goodies from Christmas in the freezer so out they came for dessert. Plenty of cold beer and scotch round out the celebration. The neighbors were here for the Iowa game. Go Hawkeyes….

avocados....

The best salad taco that I have had in Des Moines was filled with avocados, bean sprouts, shredded cheese, and hot sauce. It was so good that I had three. Add and delete to the recipe …but, it is very very good.

Oh ya, beer, brown sugar, and Goodies barbeque sauce, make a ham taste very very good. Hash brown potatoes from Sam’s feed an army. Plus, lots and lots of beer… makes a good celebration for the Iowa win. Go Hawkeyes….

nachos, miller high life, chili

repeat.

Nachos:
Spanish Rice
Melted peper jack or velveeta/ro-tel (hot)
black beans
hamburger
salsa
guac
LOTS of hot sauce
jalapenos
lettuce/tom. optional

Keep all the hot stuff on the stove, and fill your plate with chips, and then spoon all the goodness on top. The key to these nachos are the rice and beans.

Chili:
Make basically Cincy chili, minus the noodles, which is just weird.
Sub Ro-Tel for diced tomatoes
Put it in the fridge the night before you serve it, because as we all know chili tastes better the second day.

And lastly, hawkeyes suck!

At least Wally Joyner's not on the team....

Suck or not… they made the gamecocks look sick or sucky… however you want to look at it.
